The chamber of enamelled steel. The capacity of the cabinets is 8 trays of 460х330 or 435х320 mm size. The temperature regulation range is from +30°+60°C. A uniform heat distribution is ensured within the chamber due to the convection process. The steam humidification is achieved by steam evaporation from the bottom water container under the temperature effect. A glass door and a chamber illumination of the cabinet allow easily monitoring of the cooking process. Proving cabinets are used in cooking lines together with convection ovens of KPP and PKE types.
