The chamber of enamelled metal. The capacity of the cabinets is 8 trays of 600x400 mm size. The temperature regulation range is +30°+60°C. A uniform heat distribution is ensured within the chamber due to a convection process. The steam humidification is achieved by steam evaporation from the bottom water container under the temperature effect. A glass door and a chamber illumination of the cabinet allow easily monitoring of the cooking process. Proving cabinets are used in cooking lines together with convection ovens of KEP types.
